WinemakingIn the later part of October from vines with a yield of 70-90 quintals per hectare. Crushing, de-stemming and traditional maceration on the skins with pumping for about 15 days at a controlled temperature of 27 °C. Separation of the juice and fermentation in stainless steel tanks .aging with battonage for about forty days, and subsequent aging for another ten months in stainless steel tanks.
Bottling and bottle aging.
Sensory characteristics: Red wine with purple hues and with pronounced sourness of blackberry jam, plum and violet with a final note of vanilla, warm and enveloping to the palate.
Food pairing:Excellent with pasta dishes, it is exalted with second dishes of meat, cold meat and cheeses
Alcohol: 14,5% Vol.
